Modern Korean Cuisine

ONDO(온도), is a contemporary Korean restaurant serving traditional classics alongside new and exciting interpretations of Korean dishes. Inspired by Korean flavors and ingredients, these modern Korean dishes aim to appeal to a new generation of diners, yet staying true to the Korean flavors we love. ONDO’s menu is a collaboration between Executive Chef Brian Kim and his team. The team of chefs experimented with different combinations of traditional Korean cuisine with contemporary flavors to create a menu unique to ONDO.

Like the food, the space combines both modern and traditional elements to engage the senses. The design of the space respects Korean traditional aesthetics while bringing in contemporary modern elements to create a transitional dining environment. ONDO is located at Harborside Plaza Jersey City on the Hudson River waterfront.

Our name, ONDO, means temperature in Korean. Temperature or ondo is one of the most important and prevalent physical factors in the environment, which directly influences the quality and comfort of our lives. In cooking, it can affect the quality, flavor, and freshness of the food. Thermally, it can influence our comfort, morale, and health. We wanted to extend this idea of the ideal temperature to positive energy for great food, good relationships, and comfortable dining.
